IRISH GOLD RUSH COCKTAIL
Made with Irish whiskey, fresh lemon and honey, the Irish Gold Rush is a bright and balanced cocktail that lets real honey shine. Perfect for raising a glass on St Patrick’s Day ... or any day.
INGREDIENTS
60 ml Irish whiskey
20 ml fresh lemon juice
15 ml honey (or honey syrup - see note below)
Ice
Lemon slice or twist for garnish
METHOD
Add whiskey, lemon juice and honey to a cocktail shaker.
Add ice and shake well until chilled.
Strain into a glass over fresh ice.
Garnish with a lemon slice or twist.
NOTE
Honey syrup is honey mixed with water so it becomes thinner and easier to mix into drinks. To make honey syrup, add ½ cup honey to ½ cup warm (not boiling) water in a jar or small bowl. Stir or shake until the honey fully dissolves. Let it cool before using. Lasts about 2-3 weeks in a sealed jar in the fridge.
