ANZAC BISCUITS MADE WITH HONEY
Anzac biscuits have a long history, originally baked and sent to soldiers during wartime because they kept well on the journey. Traditionally made with golden syrup or treacle, this version uses our honey as a simple pantry alternative.
A small twist on a much-loved classic, shared and remembered each year.

METHOD
Preheat the oven to 180°C/350°F. Line an oven tray with baking paper.
Place the butter and honey in a medium saucepan and stir over low heat until blended. In a separate bowl, mix the bicarbonate of soda with the boiling water, then stir in to the honey mixture.
Add the remaining ingredients and mix.
Roll tablespoons of the mixture into balls and place on the lined baking tray. Flatten slightly with a fork.
Bake for 15 minutes or until golden. Cool biscuits on the tray.
Store in an airtight container for up to a week.
